Turkey Pot Pie
that leftover turkey doesn't have to go to waste. try the recipe i invented myself you will love it!
2 cans cream of chicken soup
4 or 5 cups turkey gravy (the more the better)
1 onion raw and chopped (optional)
2 cans mix vegetables or you can use cooked frozen vegetables
2 to 4 cups cooked potatoes chopped in big cubes (don't over cook)
corn tortillas, raw (the ones that bend)
2 to 5 cups leftover turkey cubed
1 to 2 pie crusts
mix the heated turkey gravy with soup, vegetables, onion. fold in carefully the potatoes and turkey. in your 13 x 9 glass casserole dish line the bottom with the corn tortillas. try to get them to cover the sides too. pour or scoop in your mixture. cover the top with the pie crusts. you might have to roll them out with the rolling pin to make the crust the right size to fit over the top. cut a couple slits in the top. brush the top with a beaten egg. use a pastry brush. (this will make it golden when baked.) bake for one hour at 350. i always place a cookie sheet under it in case it boils over.
don't be afraid to add more or less of something. its pretty hard to mess this up. the corn tortillas cook and suck up the gravy and if you like the taste of tamales you will really like this recipe.
