I like to buy the crusts ready made in the store.   less trouble.  i do know how to do it the old fashion way so if you write to me i will tell you how. 
APPLE
get a big pot and using a carrot peeler or knife take the skin off of a few apples probably 4 or 5 depending on how big your pie pan is and how big the apples are. dont't be afraid to experiment.   use the green apples.  cut into thick slices.  (you know how thick, you ate apple pie before)
throw in the pot with the juice of a half of lemon (fresh only)
throw in one fourth cup of water and 2 or 3 heaping tablespoons flour and turn the heat on.  add 1 cup of sugar and 1 teaspoon of cinnamon (optional)
don't boil.  you just want the flour and sugar to make a nice thick paste on the apples and then turn off.  this just takes a few minutes. 
put in the pie pan and throw your other crust over the top.  brush the top with one beaten egg.  if you don't have a pastry brush then use your fingers to spread it around.  cut in 4 slits in the top.  sprinkle a little sugar on top.  put the pie pan on a cookie sheet in case it boils over.
bake at 350 for one hour
